Cellar for up to 15 years. It is recommended to decant it for an hour. The Paitin winery was founded in 1796 by Benedetto Elia, nicknamed “Paitin”, who bought a farmhouse located near Neive, in Piedmont. After several generations, today the company is still owned by the Elia family, and today it covers 17 hectares of vineyards planted with the typical varieties of the area (the reds Dolcetto, Barbera, Nebbiolo, and the white Arneis). All the vineyards are converting to organic. The Nebbiolo grapes for this wine come from two vineyards (‘d Tourun and Schiena d’Ernestin) located in the Serraboella cru, the most prestigious one for Barbaresco, located south of Neive. From the steepest and hottest side of this hill come powerful wines with great elegance. The Barbaresco Serraboella Paitin shows a garnet red color with bright reflections. On the nose, it reveals itself as a very refined wine with aromas of cherries, dark berries and plums, candied orange, mint, humus, roots, pine needles, and fine spices with some mineral traits at the end. It is vigorous, with a decisive freshness and abundant but fine tannins that will guarantee it a long life. It makes a perfect partner for any game dish and aged cheese.
