Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Founded by Benedetto Elia in 1796, the Paitin winery is located on the Serraboella hill in the municipality of Neive, one of the historic areas for the production of Barbaresco. After the disasters of the two great wars, the winery resumed business in 1965 with the construction of a new cellar. The company, still owned by the Elia family, and now managed by Giovanni and Silvano Pasquero Elia, owns about 17 hectares of vineyards between the municipalities of Neive and Barbaresco. The most prestigious vineyards are exposed to the west or southwest, on fine and clayey soils of sedimentary origin. The Paitin Starda Langhe Nebbiolo shows a clear ruby color with some garnet hues. On the nose, it is immediately very refined with floral aromas of violets, irises, and roses, fruity notes of plums and cherries, and a balsamic and slightly spicy finish as a result of its nine months in casks. It is a delicious and approachable wine, with a medium structure and soft and well-balanced tannins that will guarantee a good aging potential. Try it with porcini risotto, pork in mushroom sauce, and stuffed pasta.
